Ingredients

  • 2 tablespoon soy sauce for a savory base in the glaze
  • 2 tablespoon honey provides natural sweetness and caramelization
  • 1 teaspoon sesame oil adds a nutty aroma to the glaze
  • 1 teaspoon rice vinegar gives a mild tang, can swap with lime juice
  • 1 teaspoon garlic minced (fresh for best flavor)
  • ½ teaspoon fresh ginger minced (adds a bright, zesty note)
  • ½ teaspoon sesame seeds for garnish and texture
  • 2 cod filets 5-6 oz each, fresh or thawed if frozen
  • 1 tablespoon green onions sliced diagonally (optional garnish, adds freshness)

Equipment

  • 1 oven with broiler Can substitute with a stovetop skillet or grill plank if needed
  • 1 sheet pan Use with parchment or foil for easy cleanup
  • 1 parchment paper or aluminum foil To line the sheet pan and prevent sticking
  • 1 Small mixing bowl For combining glaze ingredients
  • 1 Basting brush To evenly coat fish with glaze
  • 1 glass dish for marinating Use to hold fish while it absorbs the glaze
  • 1 Meat thermometer Optional but ensures perfectly cooked cod

Method

  1. Whisk together soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and sesame seeds in a small bowl.
  2. Arrange the cod filets in a shallow dish and pat them dry with paper towels.
  3. Brush 1 tablespoon of the glaze over the tops and sides of each filet. Cover and refrigerate for 30 minutes to 2 hours. Reserve remaining glaze.
  4. Preheat the oven to low broil and set the rack in the center. Line a sheet pan with parchment paper or aluminum foil.
  5. Place the marinated cod on the lined pan and brush with reserved glaze.
  6. Broil on low for 12–14 minutes, brushing the fish with glaze every 2–3 minutes until glaze is used up.
  7. Switch the broiler to high and broil for an additional 4–5 minutes until the exterior is golden and the internal temperature reaches 135–140°F.
  8. Transfer the filets to a serving plate and sprinkle with green onions.
  9. Serve immediately and enjoy!
