Ingredients
  

  • 8 ounces cream cheese softened to room temperature for easy mixing
  • ½ cup 100 g granulated sugar (for sweetness)
  • 1 teaspoon fresh lemon juice for stability and slight tang
  • 1 pound fresh strawberries washed, hulled, diced for filling
  • 12 egg roll wrappers or substitute with wonton wrappers
  • Water for sealing edges of wrappers
  • Confectioners’ sugar for dusting after cooking

Method
 

  1. Combine the cream cheese, sugar, and lemon juice in a medium bowl. Beat with a hand mixer on medium speed until smooth and fluffy.
  2. Gently fold in the diced strawberries until evenly distributed.
  3. Place the egg roll wrappers on a clean surface. Spoon 2-3 tablespoons of the cream cheese mixture onto the center of each wrapper.
  4. Moisten the edges of each wrapper with a little water. Fold the bottom corner over the filling, then fold in the sides and roll tightly to form an envelope shape.
  5. Brush or lightly spray the outsides of the egg rolls with cooking oil.
  6. Air fry at 400°F (200°C) for 4-5 minutes, flipping halfway through, until golden and crispy.
  7. Transfer to a plate to cool slightly. Dust with confectioners’ sugar just before serving.
