Ingredients
  

  • 4 ½ oz coconut cream full-fat, well shaken or stirred smooth
  • 4 oz white rum light-bodied rum for clean flavor
  • 36 fresh mint leaves bright green, gently rinsed
  • 3 tablespoon fresh lime juice freshly squeezed for best acidity
  • 1 ¼ tablespoon granulated sugar fine texture dissolves easily
  • Ice fresh, cubed or crushed as preferred
  • Seltzer water plain and well chilled
  • Pomegranate seeds fresh arils for garnish
  • 3 mint sprigs for serving garnish

Method
 

  1. Blend the coconut cream and white rum together until airy and lightly whipped using a blender or hand mixer.
  2. Place mint leaves, lime juice, and sugar into a Collins glass and press firmly for 15–20 seconds until fragrant.
  3. Fill the glass completely with ice, then slowly pour the coconut-rum mixture over the top.
  4. Finish the drink with a generous splash of seltzer, tasting and adjusting fizz as desired.
  5. Decorate with a mint sprig and scatter pomegranate seeds over the ice before serving.
