  • 8 large eggs fresh, preferably free-range
  • 2 ½ cups whole milk or 2% for lighter option
  • 1 teaspoon kosher salt adjust to taste
  • 1 teaspoon ground mustard adds gentle tang
  • 6 slices white sandwich bread cubed (about ½-inch pieces; crusts removed if desired)
  • 1 cup shredded Cheddar cheese sharp or mild, based on preference
  • Cooking spray for greasing baking dish

Method
 

  1. Cook the sausage in a large skillet over medium-high heat until fully browned and crumbly, about 10 minutes.
  2. Drain any excess grease from the pan.
  3. In a large bowl, whisk the eggs together, then blend in the milk, salt, and ground mustard until smooth.
  4. Fold in the cubed bread, shredded Cheddar, and cooked sausage, making sure everything is evenly combined.
  5. Spray a 7x11-inch baking dish with cooking spray and pour the mixture in. Cover and refrigerate for 8 hours or overnight.
  6. Remove the dish from the refrigerator 30 minutes before baking. Preheat oven to 350°F (175°C).
  7. Bake uncovered for 40–50 minutes, or until a knife inserted in the center comes out clean and the top is lightly golden.
  8. Let cool slightly before serving for easier slicing.
