Ingredients
  

  • 1 pound flank steak sliced thin across the grain for tenderness
  • pounds broccoli florets fresh or well-drained frozen
  • 1 tablespoon vegetable oil neutral oil for stir-frying
  • 2- inch piece fresh ginger minced for bright flavor
  • 3 cloves garlic minced for aroma
  • For the Marinade:
  • 2 tablespoons cornstarch to coat and tenderize the beef
  • 1 tablespoon soy sauce regular or low-sodium
  • 2 teaspoons rice vinegar unseasoned for mild tang
  • ½ teaspoon sesame oil for nutty aroma
  • For the Sauce:
  • 8 tablespoons water to create the base
  • 2 tablespoons soy sauce for savory depth
  • 2 tablespoons oyster sauce or hoisin sauce as substitute
  • 2 teaspoons cornstarch to thicken sauce
  • 1 teaspoon dark brown sugar for subtle sweetness
  • ½ teaspoon sesame oil for flavor enhancement

Method
 

  1. Whisk together the marinade ingredients in a small bowl and pour into a resealable plastic bag. Add the beef slices, seal, and shake to coat evenly. Let sit at room temperature for 15 minutes.
  2. Place 1 inch of water in a large skillet or wok and bring to a boil. Add broccoli, cover, and steam for 3 minutes. Drain and set aside.
  3. Dry the skillet and heat vegetable oil over medium-high heat. Arrange beef in a single layer and cook until edges brown, about 1 minute. Add garlic and ginger, tossing until beef is fully cooked. Remove beef with a slotted spoon.
  4. Combine all sauce ingredients in a bowl, then pour into the hot skillet. Stir continuously until the sauce thickens, about 1–2 minutes. Reduce heat to low.
  5. Return the beef and broccoli to the skillet and stir to coat everything with sauce. Serve immediately over rice or noodles.
