- In a small saucepan, combine honey with 1 cup of water. Heat over medium-low, stirring occasionally, until honey dissolves. Remove from heat and let cool.
- Partially peel the cucumber, leaving some peel for added nutrients. Chop into chunks.
- Chop pineapple into bite-sized pieces.
- Add 2 cups of water, chopped pineapple, cucumber, and lime juice into a blender. Blend until smooth.
- For a smoother texture, strain the mixture through a fine-mesh sieve into a large pitcher. (This is optional.)
- Stir in the remaining 2 cups of cold water. Taste for sweetness. If needed, stir in honey syrup 1 tablespoon at a time.
- Chill in the refrigerator for 30 minutes to 1 hour, or serve immediately over ice.
