Pineapple Cucumber Agua Fresca

Ingredients
  

  • ¾ cup honey Use natural honey for a subtle sweetness
  • 1 cup water For making the honey simple syrup
  • 1 medium cucumber English or regular cucumber works
  • 3 cups ripe fresh pineapple, chopped (Use a sweet, ripe pineapple for the best flavor)
  • 4 cups cold filtered water, divided (To blend and adjust consistency)
  • Honey simple syrup as needed (For added sweetness, adjust to taste)
  • 1 lime Adds brightness and a zesty flavor
  • Ice For serving, optional

  • 1 Blender Used to blend ingredients until smooth.
  • 1 Knife For chopping cucumber and pineapple.
  • 1 Cutting Board For chopping fruits and vegetables.
  • 1 Small saucepan Used for making honey simple syrup.
  • 1 Fine mesh sieve Used to strain the mixture if desired.
  • 1 Large pitcher To combine and store the agua fresca.
  • 1 Mixing spoon To stir the agua fresca.

Method
 

  1. In a small saucepan, combine honey with 1 cup of water. Heat over medium-low, stirring occasionally, until honey dissolves. Remove from heat and let cool.
  2. Partially peel the cucumber, leaving some peel for added nutrients. Chop into chunks.
  3. Chop pineapple into bite-sized pieces.
  4. Add 2 cups of water, chopped pineapple, cucumber, and lime juice into a blender. Blend until smooth.
  5. For a smoother texture, strain the mixture through a fine-mesh sieve into a large pitcher. (This is optional.)
  6. Stir in the remaining 2 cups of cold water. Taste for sweetness. If needed, stir in honey syrup 1 tablespoon at a time.
  7. Chill in the refrigerator for 30 minutes to 1 hour, or serve immediately over ice.
