  • 1 small onion finely diced (Any type of onion will work)
  • 1 green bell pepper diced (Optional ingredient for added texture)
  • 4 cloves garlic minced (Fresh garlic for optimal flavor)
  • 1 cup reduced-sodium beef broth Provides a rich, savory base
  • 1 tablespoon cornstarch For thickening the sauce
  • 1 ½ teaspoons beef bouillon Adds depth to the beef flavor
  • 2 tablespoons ketchup For a slight tangy sweetness
  • 2 tablespoons Worcestershire sauce Boosts umami flavor
  • 1 teaspoon Dijon mustard For added sharpness
  • 1 teaspoon each dried oregano dried parsley (Herbs to enhance flavor)
  • ½ teaspoon each salt pepper, dried basil, paprika (Basic seasonings)
  • ¼ teaspoon red pepper flakes Adjust to taste for spice
  • ¾ cup freshly grated sharp cheddar cheese Melted into the filling
  • 6 brioche hamburger buns Soft and slightly sweet, perfect for this dish
  • Softened butter or mayonnaise for brushing Optional, adds flavor and crispiness
  • 6 slices provolone cheese For melting on top of the filling

Equipment

  • 1 Large cast iron skillet The best pan for browning ground beef evenly and building a flavorful fond at the bottom of the pan. A large stainless steel skillet works too.
  • 1 Baking tray For toasting the buns and melting the provolone in the oven.
  • 1 Measuring cup or small bowl To whisk the broth, cornstarch, and bouillon together before adding to the skillet.
  • 1 Oven Set to 400°F for both toasting the buns and melting the cheese at the end.

Method

  1. Preheat your oven to 400°F. Split the buns and arrange them cut side up on a baking tray. Brush the cut sides with softened butter or mayo, if desired. Toast for 5 minutes.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef, diced onion, and bell pepper. Cook until the beef is browned and the onions are soft, about 7 minutes. Add the minced garlic and sauté for 30 seconds.
  3. In a measuring cup, whisk together the beef broth, cornstarch, and beef bouillon until smooth. Add the mixture to the beef and vegetable combination. Stir in ketchup, Worcestershire sauce, Dijon mustard, and all seasonings.
  4. Let the mixture simmer for about 5 minutes, stirring occasionally, until the liquid thickens slightly but remains saucy.
  5. Stir in the grated sharp cheddar cheese and continue stirring until it melts into the sauce.
  6. Spoon the mixture onto the toasted bun bottoms, then top each with a slice of provolone cheese.
  7. Return the sandwiches to the oven and bake for 5-10 minutes, or until the provolone is fully melted. Remove from the oven, top with the bun tops, and serve hot.
