Pan Seared Buttery Garlic Ribeye Steak

Ingredients
  

  • 2 tablespoons vegetable oil For searing steak
  • 1 large ribeye steak At least 1-inch thick, at room temperature
  • 1 head garlic sliced in half (For flavor infusion)
  • 4 sprigs fresh thyme Optional: Can substitute rosemary
  • 4 tablespoons butter For basting steak

  • 1 Cast iron skillet Must be oven-proof, essential for even heat distribution.
  • 1 Tongs For flipping the steak without piercing it.
  • 1 Spoon For basting the steak with butter.
  • 1 Instant-read meat thermometer Takes the guesswork out of doneness.
  • 1 Aluminum foil To tent the steak while it rests.

Method
 

  1. Remove the steak from the refrigerator and let it rest at room temperature for about 30 minutes. Season both sides generously with salt and black pepper.
  2. Preheat the oven to 450ºF (232ºC).
  3. Heat the oil in a cast iron or heavy oven-proof skillet over medium-high heat. Once hot, add the steak, garlic, and thyme. Let the steak cook for about 4 minutes without turning.
  4. Use tongs to flip the steak. Add butter to the pan, placing the garlic and thyme on top of the steak. Tilt the skillet towards you to pool the butter, then continuously spoon the melted butter over the steak for 2 minutes.
  5. Transfer the skillet to the preheated oven and cook the steak for about 2 minutes, depending on thickness and desired doneness. Use a meat thermometer and remove when the steak is 5º below your target temperature (125ºF for medium-rare).
  6. Remove the steak from the skillet and tent it with foil. Let it rest for 5 minutes. Spoon any remaining butter from the skillet over the steak before serving.
