Ingredients
  

  • 1 ½ pounds boneless skinless chicken breasts or thighs even thickness for even cooking
  • 1 teaspoon sea salt or to taste
  • ½ teaspoon freshly ground black pepper or more if preferred
  • 2 tablespoons avocado oil or other neutral oil
  • 8 ounces mushrooms sliced (any variety, cleaned)
  • 1 shallot diced (or 2 tablespoons finely chopped red onion)
  • 8 ounces frozen spinach thawed and drained (or fresh baby spinach)
  • 1 teaspoon minced garlic or ¼ teaspoon garlic powder
  • ¼ cup white wine or chicken broth for deglazing and flavor
  • 1 ½ cups heavy cream or half-and-half for lighter version
  • ½ cup freshly grated Parmesan cheese or Pecorino Romano

Method
 

  1. If using chicken breasts, place them in a plastic bag and gently pound to uniform thickness.
  2. Season the chicken on both sides with salt and pepper.
  3. Heat the oil in a large skillet over medium-high heat until shimmering.
  4. Add the chicken and cook for 7 minutes per side until golden brown and internal temperature reaches 155°F.
  5. Remove the chicken and cover loosely with foil to rest.
  6. Add the mushrooms and shallots to the same skillet and sauté for 7 minutes until tender.
  7. Stir in the spinach and garlic, cooking for another 1 minute until fragrant.
  8. Pour in the wine or chicken broth, scraping up browned bits from the pan.
  9. Reduce heat to medium-low and stir in heavy cream and Parmesan cheese until the cheese is melted and sauce is smooth.
  10. Return the chicken to the skillet, coat with sauce, and cook for 2 more minutes until fully cooked (165°F).
