Ingredients

  • ½ cup warm water for activating yeast
  • 1 ⅛ teaspoons active dry yeast or 1 package instant yeast for faster rise
  • 1 ¼ cup room temperature water to bring dough to proper temperature
  • 2 tablespoons olive oil adds richness and tenderizes dough
  • 4 cups bread flour about 22 ounces; high protein for chewy texture
  • 1 ½ teaspoons salt enhances flavor and controls yeast
  • 1 tablespoon semolina flour prevents sticking, adds crispness
  • ½ teaspoon garlic powder for buttery garlic flavor
  • 3 tablespoons butter melted (forms garlic butter base)
  • 2 tablespoons grated Parmesan cheese nutty, sharp flavor
  • 1 cup shredded mozzarella cheese melts stretchy for gooey pulls
  • Pizza or marinara sauce for serving, optional

Equipment

  • 1 Medium mixing bowl For activating yeast and initial mixing
  • 1 Food processor or large mixing bowl To combine dough thoroughly
  • 1 Plastic wrap To cover dough while it rises
  • 1 Rolling pin Dust with flour or semolina to prevent sticking
  • 1 Baking sheet or pizza pan Lightly greased or lined with parchment
  • 1 Small bowl For mixing melted butter and garlic powder
  • 1 Pastry brush For evenly spreading garlic butter over dough
  • 1 Knife or pizza cutter To slice baked sticks

Method

  1. Combine the warm water and yeast in a medium bowl, whisking briefly. Let the mixture sit for a few minutes until foamy.
  2. Add room temperature water and olive oil to the foamed yeast, stirring to blend.
  3. Place bread flour and salt in a large mixing bowl and whisk to evenly distribute the salt.
  4. Pour the yeast mixture into the flour and stir or knead by hand or with a mixer until dough is smooth, elastic, and slightly tacky.
  5. Transfer dough to a lightly oiled bowl, cover with plastic wrap, and allow it to rise in a warm spot until doubled in size, approximately 30–40 minutes.
  6. Preheat the oven to 350°F.
  7. Grease a baking sheet lightly or line with parchment paper and set aside.
  8. Sprinkle semolina flour on your countertop and rolling pin to prevent sticking, then roll the dough into a rectangle roughly the size of the baking sheet.
  9. Melt the butter in a small bowl using medium power in the microwave for 30 seconds, then stir in garlic powder until combined.
  10. Brush the garlic butter evenly over the dough.
  11. Sprinkle grated Parmesan evenly across the dough and top with shredded mozzarella cheese.
  12. Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and the edges are golden brown.
  13. Remove from oven, let rest for 3–5 minutes, then cut into strips and serve hot with pizza or marinara sauce.
