Ingredients

  • 2 cups water filtered for clean flavor
  • 2 hibiscus tea bags or 2 tablespoons dried hibiscus flowers unsweetened and food-grade
  • ½ cup strawberries fresh, hulled, and ripe for best sweetness
  • ¼ cup lemon juice freshly squeezed for brightness
  • 2 –3 tablespoons maple syrup pure, adjust to taste preference
  • Extra strawberries lemon slices, or mint leaves (optional for garnish and aroma)

Equipment

  • 1 Tea kettle Used to bring water to a boil for steeping the hibiscus
  • 1 Heat-safe container Needed to steep the hibiscus tea, such as a teapot or large measuring cup
  • 1 Blender Used to puree the strawberries until smooth
  • 1 Fine mesh sieve or nut milk bag Optional tool for straining strawberry puree for a smoother texture
  • 1 Large pitcher Used for mixing and serving the finished refresher
  • 1 Stirring spoon Used to combine all ingredients evenly in the pitcher

Method

  1. Bring the water to a rolling boil in a kettle, remove it from heat, add the hibiscus tea bags or dried flowers, and steep until deeply colored before removing the solids and allowing the tea to cool.
  2. Place the sliced strawberries into a blender with a portion of the cooled hibiscus tea and blend until fully smooth, then strain if a finer texture is desired.
  3. Pour the remaining hibiscus tea into a large pitcher, add the strawberry mixture, lemon juice, and maple syrup, and stir well before tasting and adjusting sweetness or tartness as needed.
  4. Serve the refresher over ice and finish with fresh fruit slices or mint if desired.
