  • 1 can black beans drained and rinsed (15 oz, canned for convenience)
  • 1 can pinto beans drained and rinsed (15 oz, adds creaminess)
  • 1 can crushed tomatoes 28 oz, fire-roasted if available
  • 1 can diced green chilies 4 oz, mild heat
  • 1.25 cups corn kernels fresh or frozen both work well
  • 3.25 cups chicken broth low-sodium recommended
  • 1.75 tablespoon chili powder adjust to heat preference
  • 1.25 teaspoon ground cumin freshly opened for best flavor
  • 1 teaspoon paprika adds warmth and color
  • 0.75 teaspoon garlic powder even seasoning throughout
  • 0.75 teaspoon onion powder balances the spices
  • 0.75 teaspoon salt adjust after simmering
  • 0.5 teaspoon black pepper freshly cracked if possible

Equipment

Method
 

  1. Cook the ground beef in a large soup pot over medium heat, breaking it apart as it cooks until no pink remains.
  2. Add the beans, crushed tomatoes, green chilies, corn, chicken broth, and all seasonings to the pot.
  3. Stir thoroughly to combine everything evenly and bring the soup to a gentle boil.
  4. Reduce the heat to low and allow the soup to simmer uncovered for about 20 minutes so the flavors meld together.
