  • 1 green bell pepper diced (for a mild, crisp bite)
  • 2 cloves garlic minced (fresh for best flavor)
  • 2 to 3 medium Russet potatoes peeled and thinly sliced (for even layering and tenderness)
  • 1 10.75-ounce can condensed cream of mushroom soup (rich and creamy base)
  • 1 cup sour cream full-fat for creaminess
  • 1 cup shredded cheddar cheese sharp for flavor contrast
  • Salt and pepper to taste (enhances all flavors)
  • French fried onions crispy topping for texture
  • Optional toppings: sliced green onions chopped fresh parsley (for garnish and freshness)

Method
 

  1. Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks.
  3. Add the diced onion, green bell pepper, and minced garlic to the skillet. Sauté until the vegetables are soft and fragrant.
  4. In a mixing bowl, combine the cream of mushroom soup, sour cream, salt, and pepper. Stir until smooth and well blended.
  5. Arrange the potato slices in two even layers at the bottom of the greased baking dish, seasoning each layer lightly with salt and pepper.
  6. Spread the cooked ground beef and vegetable mixture evenly over the potato layers.
  7. Pour the sour cream and mushroom mixture over the beef layer and smooth it out evenly.
  8. Sprinkle the shredded cheddar cheese over the top of the casserole.
  9. Cover the casserole with aluminum foil and bake for 45-50 minutes, or until the potatoes are tender when pierced with a fork.
  10. Remove the foil and top the casserole with French fried onions. Bake for an additional 5 minutes until the onions are golden and crispy.
  11. Let the casserole rest for a few minutes before garnishing with sliced green onions or chopped parsley.
  12. Slice and serve the casserole warm.
