  • 1 lb store-bought pizza dough brought to room temperature for easy rolling
  • All-purpose flour used generously to prevent sticking
  • 3 tablespoon olive oil divided, extra virgin preferred
  • 1 cup pizza or marinara sauce room temperature for easy spreading
  • 3 cups shredded Italian blend cheese freshly shredded melts best
  • ¾ cup pitted Kalamata olives roughly chopped for even distribution
  • 6 large eggs cracked individually to avoid shells
  • 1 cup fresh arugula washed and dried thoroughly

Method
 

  1. Lightly spray a 12-inch pizza pan and place it in the oven while preheating to 500°F.
  2. Dust a clean surface with flour and roll the dough into a wide 12-inch round.
  3. Carefully remove the hot pan and stretch the dough across it, pressing gently to the edges. Prick the surface with a fork, brush lightly with some olive oil, spread sauce evenly, scatter cheese and olives, then crack the eggs over the top, spacing them apart.
  4. Transfer the pizza to the oven and bake until the crust turns deeply golden and the egg whites are set, about 8–10 minutes.
  5. Finish with a handful of arugula and drizzle with the remaining olive oil before slicing.
