Ingredients

  • 2 ¼ cups All-purpose flour provides structure and prevents excessive spreading
  • ½ cup Cake flour softens cookies for a tender, fluffy texture
  • 2 teaspoon Cornstarch keeps centers soft and cookies thick
  • 1 cup Brown sugar adds moisture and chewiness; light or dark is fine
  • ½ cup Granulated sugar helps cookies spread slightly while baking
  • 1 cup Cold unsalted butter chilled for air pockets and lighter cookies
  • 2 large Eggs room temperature for fluffiness; extra yolk adds richness
  • 2 teaspoon Pure vanilla extract enhances chocolate flavor and adds depth
  • 1 cup Graham crackers crushed (adds crunchy texture; reserve a few for topping)
  • 1 cup Milk chocolate chips for gooey melted chocolate in every bite
  • 1 Hershey’s chocolate bar broken into chunks (larger pieces for melty pockets; optional for decoration)
  • 6 large Marshmallows halved (soft center; can peek slightly from cookie tops)

Equipment

  • 1 Stand mixer with paddle attachment For creaming butter and sugar efficiently
  • 1 Large mixing bowl To combine all wet and dry ingredients
  • 1 Rubber spatula To fold in ingredients gently
  • 1 set Measuring Cups and Spoons For accurate measurement of ingredients
  • 1 Whisk To mix dry ingredients or beat eggs if needed
  • 2 baking sheets For baking multiple cookies at once
  • 2 Parchment paper or silicone baking mats Prevents cookies from sticking and allows even baking

Method

  1. Beat the cold butter with brown and granulated sugar until light and fluffy.
  2. Add eggs and vanilla extract, mixing until fully incorporated.
  3. Sift together all-purpose flour, cake flour, and cornstarch, then fold into the wet mixture.
  4. Gently stir in crushed graham crackers, milk chocolate chips, and Hershey’s chocolate chunks until evenly distributed.
  5. Scoop cookie dough into balls and create a small well in the center of each.
  6. Place half a marshmallow into each well and carefully enclose with dough, allowing the marshmallow to slightly peek if desired.
  7. Transfer cookies to a lined baking sheet, spacing them evenly, and bake at 350°F (175°C) for 10–12 minutes until edges are golden but centers remain soft.
  8. Let the cookies cool slightly on the sheet before serving to enjoy the melty chocolate and gooey marshmallow.
