Ingredients

  • 1.1 lb ground beef 80/20 blend for juicy filling
  • 1 medium yellow onion finely diced (adds sweetness and moisture)
  • 2 garlic cloves minced (fresh for bold flavor)
  • cup grated parmesan cheese divided (finely grated for even melting)
  • cups cheddar cheese freshly shredded (sharp preferred for flavor)
  • 1 can refrigerated biscuit dough 16–17 oz (classic flaky-style biscuits)
  • tablespoons unsalted butter melted (for brushing and richness)
  • tablespoons fresh parsley finely chopped (adds freshness and color)
  • ¾ teaspoon garlic powder enhances garlic butter flavor
  • ¾ teaspoon salt to season beef evenly
  • ½ teaspoon black pepper freshly cracked for best taste

Equipment

  • 1 Baking sheet Used to bake the biscuit bombs evenly until golden and puffed
  • 1 Parchment paper Prevents sticking and keeps cleanup quick and easy
  • 1 Large skillet Ideal for browning the beef and softening the onion and garlic
  • 2 Mixing bowls One for mixing garlic butter and one optional for prep work
  • 1 Spoon or portion scoop Helps evenly divide the cheeseburger filling
  • 1 Pastry brush Used to brush garlic parmesan butter over the biscuits before baking

Method

  1. Set the oven to 375°F and line a baking sheet with parchment paper.
  2. Cook the ground beef with diced onion and minced garlic over medium-high heat until browned and softened, then drain excess grease and season with salt and pepper.
  3. Stir the cheddar cheese and most of the parmesan into the hot beef mixture until fully melted and combined.
  4. Flatten each biscuit into a wide round, place filling in the center, then fold and pinch the dough closed to seal tightly.
  5. Stir the melted butter with garlic powder, parsley, and remaining parmesan until blended.
  6. Place sealed biscuits seam-side down on the tray, brush generously with garlic butter, and bake until puffed and golden.
  7. Let cool briefly, then garnish with extra parsley or parmesan and serve warm.
