Ingredients
  

  • 1 cup warm water 110°F, activates yeast
  • 1 tablespoon granulated sugar to activate yeast
  • teaspoons active dry yeast 1 packet, or instant yeast for quicker preparation
  • cups all-purpose flour for the dough
  • 1 teaspoon kosher salt to balance flavor
  • 1-2 tablespoons olive oil for greasing the bowl
  • ½ cup salted butter melted (113g, for garlic butter mixture)
  • 1-2 cloves garlic finely minced (for the garlic butter)
  • cups shredded parmesan cheese freshly grated for best melt
  • Flaky or coarse sea salt to sprinkle on top
  • Fresh parsley chopped (for garnish)
  • Marinara sauce warmed (for dipping)

Method
 

  1. Combine the warm water, sugar, and yeast in a stand mixer bowl. Let it sit for 5 minutes until foamy.
  2. Add the flour and salt to the mixture. Use the dough hook on low speed until combined, then increase to medium-high for 5 minutes, until smooth and slightly tacky.
  3. Oil the mixing bowl and transfer the dough. Cover and let rise in a warm place until doubled in size, about 45 minutes.
  4. Once risen, turn the dough out and flatten it to a 1-inch thickness. Use a bench scraper or pizza cutter to cut the dough into 1-inch pieces.
  5. Pinch the corners of each dough piece to form small balls, rolling them to seal the edges.
  6. Place the dough balls into a large cast iron skillet, leaving some space between each one. Cover with a towel and let them puff up slightly.
  7. Preheat the oven to 375°F.
  8. Mince the garlic and melt the butter together, mixing well. Pour the garlic butter over the dough, ensuring it covers all sides.
  9. Sprinkle flaky sea salt on top, then add half of the parmesan cheese. Bake for 10 minutes.
  10. After 10 minutes, remove from the oven and add the remaining parmesan cheese. Return to the oven and bake for another 10-15 minutes until golden brown.
  11. Remove from the oven and garnish with fresh parsley. Serve with warm marinara sauce for dipping.
