Ingredients
  

  • 4 Tablespoons butter divided, for cooking the steak and potatoes
  • 1 Tablespoon olive oil for sautéing
  • 1 pound potatoes cut into bite-sized pieces, waxy varieties like Yukon Gold work best
  • 6 cloves garlic minced, fresh garlic preferred for best flavor
  • 1 Tablespoon fresh rosemary finely chopped, for herbal flavor
  • 1 Tablespoon fresh oregano finely chopped, adds a fresh, earthy taste
  • 1 teaspoon kosher salt divided, enhances the flavor
  • 2 pounds sirloin steak cut into 1-inch pieces, lean sirloin recommended for a tender and healthy option
  • ½ teaspoon black pepper for seasoning
  • ¼ cup water to help steam the potatoes to tenderness
  • 2 Tablespoons fresh parsley finely chopped, for garnish

Method
 

  1. Add 1 tablespoon of butter and olive oil to a heavy skillet over medium heat.
  2. Once the butter has melted, add the potatoes, garlic, rosemary, oregano, and ½ teaspoon of salt. Sauté for about 5 minutes, until the garlic turns golden brown.
  3. Add water to the pan and cover. Lower the heat to medium-low, and cook for 5-10 minutes until the potatoes are tender. Remove them from the pan and tent with foil.
  4. Add the remaining butter to the pan and increase the heat to medium-high. Once melted, add the steak pieces. Sprinkle the remaining salt and pepper over the steak. Cook until the steak pieces are browned and cooked to your preference.
  5. Return the potatoes to the skillet, stirring to combine. Cook for 1-2 minutes to warm everything through.
  6. Stir in the fresh parsley. Remove from heat and serve immediately.
