- Begin by washing and drying the peaches. Slice each peach around its pit, discarding the pit, and cut into smaller wedges.
- If you're using a blender, food processor, or immersion blender, continue slicing the peach sections into smaller pieces once pitted.
- If peeling the peaches, blanch them briefly in boiling water for 30 seconds, then transfer to an ice bath for easy peeling. Slice as directed.
- For juicing with a juicer, feed the sliced peaches into the juicer following the manufacturer’s guidelines. Discard or compost any remaining pulp.
- For a blender or food processor, combine the peach slices and cold water, and blend until smooth. If the mixture is too thick, add more cold water. Strain through a fine-mesh sieve or nut milk bag to remove pulp.
- Once you have your juice, stir in the sweetener of your choice (cane sugar, maple syrup, or agave nectar), and add the lemon juice. Adjust to taste.
- If you used a juicer, proceed as above to create the nectar by adding sweetener and lemon juice, mixing until well combined.
- Serve the peach juice or nectar immediately, or chill for later use. Enjoy as is or mix into cocktails or mocktails.
