Fresh Peach Juice & Peach Nectar

Ingredients
  

  • 6 large peaches yellow or white varieties, peeled optional, adjust for ripeness
  • ½ cup cold water use more for a thinner juice
  • 2-3 tablespoon cane sugar or maple syrup/agave nectar, adjust to sweetness
  • 1 small lemon or substitute with lime or orange juice for tang

  • 1 Blender For blending peaches into juice or nectar.
  • 1 Juicer For extracting juice from fresh peaches.
  • 1 Food processor Alternative to blender for peach juice.
  • 1 Immersion Blender Ideal for blending in a bowl or pitcher.
  • 1 Fine Mesh Strainer For straining out pulp if using a blender or food processor.
  • 1 Nut Milk Bag Can be used as an alternative to fine mesh strainer for straining pulp.
  • 1 Mason Jars For storing the fresh peach juice or nectar.

Method
 

  1. Begin by washing and drying the peaches. Slice each peach around its pit, discarding the pit, and cut into smaller wedges.
  2. If you're using a blender, food processor, or immersion blender, continue slicing the peach sections into smaller pieces once pitted.
  3. If peeling the peaches, blanch them briefly in boiling water for 30 seconds, then transfer to an ice bath for easy peeling. Slice as directed.
  4. For juicing with a juicer, feed the sliced peaches into the juicer following the manufacturer’s guidelines. Discard or compost any remaining pulp.
  5. For a blender or food processor, combine the peach slices and cold water, and blend until smooth. If the mixture is too thick, add more cold water. Strain through a fine-mesh sieve or nut milk bag to remove pulp.
  6. Once you have your juice, stir in the sweetener of your choice (cane sugar, maple syrup, or agave nectar), and add the lemon juice. Adjust to taste.
  7. If you used a juicer, proceed as above to create the nectar by adding sweetener and lemon juice, mixing until well combined.
  8. Serve the peach juice or nectar immediately, or chill for later use. Enjoy as is or mix into cocktails or mocktails.
