Ingredients

  • 2 cups all-purpose flour provides structure for fluffy waffles
  • ¼ cup corn starch ensures crispiness on the outside
  • 1 ½ teaspoons baking powder helps the waffles rise
  • 1 ½ teaspoons baking soda supports extra fluffiness
  • ½ teaspoon salt enhances overall flavor
  • 3 tablespoons granulated sugar adds sweetness and browning
  • 2 large eggs separated (yolks for richness, whites for airy texture)
  • 2 cups whole milk provides moisture and tenderness
  • 1 teaspoon vanilla extract adds a warm flavor
  • ½ cup vegetable oil keeps waffles tender and light

Equipment

  • 1 Belgian Waffle Maker 8-inch size, non-stick plates, cool-touch handle
  • 1 3-Piece Mixing Bowl Set 1-Qt, 1.5-Qt, and 2.5-Qt glass bowls for prep and mixing
  • 1 Electric hand mixer For whipping egg whites to stiff peaks
  • 1 Balloon Wire Whisks 8", 10", or 12" sizes for blending and folding
  • 1 Measuring Cups and Spoons For precise ingredient measurement

Method

  1. Preheat your Belgian waffle iron and lightly spray with cooking oil.
  2. In a large bowl, whisk together the flour, corn starch, baking powder, baking soda, salt, and sugar until well combined.
  3. In a separate medium bowl, whisk the egg yolks, milk, vanilla, and vegetable oil until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until fully incorporated, scraping the sides of the bowl.
  5. In another bowl, beat the egg whites with an electric mixer until stiff peaks form.
  6. Gently fold the egg whites into the batter, being careful not to deflate them.
  7. Spoon the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions until golden and crisp.
  8. Serve the waffles immediately with your favorite toppings like berries, syrup, or Nutella.
