Method

  3. In a large mixing bowl, whisk together the flour, baking powder, and salt until evenly combined.
  4. Add the olive oil, blended cottage cheese, chopped spinach, and shredded mozzarella. Fold gently until a uniform dough forms.
  5. If the dough is too sticky, sprinkle in extra flour one tablespoon at a time. If too dry, drizzle a small amount of olive oil and fold lightly.
  6. Divide the dough into 6 equal portions and shape each piece into a classic bagel with a hole in the center or flatten for a “flagel” style.
  7. Place the shaped bagels onto the prepared baking sheet and brush the tops with the beaten egg for a shiny finish.
  8. Sprinkle your choice of toppings, such as everything bagel seasoning, extra cheese, or seeds.
  9. Bake in the preheated oven for 22–25 minutes, until the bagels are golden brown and springy on top.
