Method
 

  1. Heat vegetable oil in a large pot or deep fryer to 350°F.
  2. In a large bowl, combine warm milk and yeast. Allow it to sit for about 5 minutes until it becomes foamy. Then, add eggs, sugar, melted butter, vanilla, and salt. Slowly incorporate the flour until a soft dough forms.
  3. Grease a clean bowl lightly and place the dough inside. Cover it and allow it to rise in a warm area for about 1 to 1.5 hours, or until it has doubled in size. prep
  4. Roll the dough out on a floured surface to about ¼-inch thickness. Use a sharp knife or pizza cutter to cut it into squares approximately 2 inches wide.
  5. Fry the beignets in batches for 2-3 minutes per side, until golden brown and puffed. Use a slotted spoon to transfer the fried beignets to paper towels to drain excess oil.
  6. While still warm, generously dust the beignets with powdered sugar.
  7. Serve immediately with your favorite drink or on their own, and enjoy!
