Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x9 inch baking dish with nonstick cooking spray.
  2. In a medium-sized mixing bowl, crack the eggs and add garlic powder, salt, and black pepper. Whisk until the mixture is fully combined.
  3. Add cottage cheese, Parmesan cheese, chopped spinach, and diced onions to the bowl. Stir everything together until evenly distributed.
  4. Pour the egg and vegetable mixture into the greased baking dish, spreading it evenly.
  5. Place the baking dish into the oven and bake for 30-35 minutes, or until the center of the egg bake is fully set and firm.
  6. Remove from the oven and let it cool slightly before serving. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat portions in a skillet or microwave.
