- Preheat your oven to 375°F (190°C). Grease a 9x9 inch baking dish with nonstick cooking spray.
- In a medium-sized mixing bowl, crack the eggs and add garlic powder, salt, and black pepper. Whisk until the mixture is fully combined.
- Add cottage cheese, Parmesan cheese, chopped spinach, and diced onions to the bowl. Stir everything together until evenly distributed.
- Pour the egg and vegetable mixture into the greased baking dish, spreading it evenly.
- Place the baking dish into the oven and bake for 30-35 minutes, or until the center of the egg bake is fully set and firm.
- Remove from the oven and let it cool slightly before serving. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat portions in a skillet or microwave.
