Ingredients
  

  • cooking spray or oil mister for greasing baking surface
  • 1 teaspoon olive oil extra virgin for sautéing
  • ½ medium onion chopped (adds sweetness and depth)
  • 2 cloves garlic minced (for aromatic flavor)
  • ¼ cup chopped scallions fresh, for subtle onion flavor
  • 10 oz frozen chopped spinach thawed and excess water squeezed (for moist filling)
  • ¼ cup chopped fresh parsley for herbal freshness
  • 1 tablespoon chopped fresh dill optional, for bright flavor
  • ½ cup crumbled feta cheese 2.5 oz, tangy and creamy
  • cup fat-free ricotta cheese for creamy texture
  • ¼ teaspoon kosher salt and pepper plus extra to taste (for seasoning filling)
  • 8 thin skinless chicken breast cutlets about 1.5 lbs total (for easy rolling)
  • 1 large egg for egg wash
  • 1 tablespoon water to thin egg wash
  • ½ cup whole wheat seasoned breadcrumbs for crispy coating

Method
 

  1. Preheat the oven to 350°F and lightly coat a large baking sheet with cooking spray.
  2. Warm olive oil in a medium skillet over medium heat.
  3. Add chopped onion, garlic, and scallions; sauté for about 1 minute until fragrant.
  4. Stir in spinach, parsley, dill, ¼ teaspoon salt, and pepper; cook an additional minute until thoroughly heated.
  5. Remove the skillet from heat and fold in feta and ricotta cheese.
  6. Season chicken cutlets lightly with additional salt and pepper to taste.
  7. Place roughly ¼ cup of the spinach-cheese mixture in the center of each chicken cutlet and roll tightly; position seam-side down on a plate or wax paper.
  8. In a small bowl, whisk together egg and water with a pinch of salt.
  9. Place breadcrumbs in a separate bowl.
  10. Dip each chicken roll in the egg mixture, then coat evenly with breadcrumbs, and transfer seam-side down onto the prepared baking sheet.
  11. Lightly spray the tops of the chicken rolls with cooking spray.
  12. Bake for approximately 25 minutes or until the chicken is fully cooked through.
