Method
 

  1. Preheat the oven to 400°F (200°C) and ready a large baking sheet.
  2. Rinse the potatoes thoroughly and cut them into evenly sized pieces so they cook at the same rate.
  3. Slice the smoked sausage into uniform rounds to ensure even roasting.
  4. Stir together the ranch seasoning, garlic powder, onion powder, and black pepper in a small bowl.
  5. Place the potatoes in a large bowl, drizzle with olive oil, and toss with half of the seasoning mixture until coated.
  6. Line or lightly grease the baking sheet, then spread the potatoes out in a single layer.
  7. Scatter the sausage slices evenly over the potatoes so everything roasts together.
  8. Roast in the oven for 35–40 minutes, stirring once halfway through, until the potatoes are crisp and tender.
  9. Remove the pan from the oven and sprinkle the cheese evenly over the hot potatoes and sausage.
  10. Return the pan to the oven for about 5 minutes, just until the cheese melts and bubbles.
  11. Take the dish out, garnish with parsley, and serve warm with sour cream if desired.
