Ingredients

  • ½ cup unsalted butter softened to room temperature for smooth blending
  • 14 ounces sweetened condensed milk full can for structure and sweetness
  • 1 teaspoon vanilla extract adds warmth and balances sweetness
  • 3 cups sweetened shredded coconut provides chewiness and moisture
  • 1 cup graham cracker crumbs finely crushed for binding
  • ¼ teaspoon salt enhances overall flavor
  • ½ cup chocolate chips mini or regular depending on texture preference
  • ¼ cup additional graham cracker crumbs used only for rolling and coating

Equipment

  • 1 Large mixing bowl Used to combine all ingredients without overcrowding
  • 1 Hand mixer or mixing spoon A mixer makes blending smoother, but a sturdy spoon works well
  • 1 Cookie scoop Optional tool for evenly portioned balls
  • 1 Baking sheet or airtight container Needed for chilling and storing the formed bites
  • 1 Refrigerator Essential for firming the mixture and setting the texture

Method

  1. Combine the softened butter, sweetened condensed milk, and vanilla in a large bowl and stir until the mixture looks thick, glossy, and completely uniform.
  2. Add the shredded coconut, graham cracker crumbs, salt, and chocolate chips, stirring until everything is evenly distributed and the mixture becomes dense.
  3. Place the bowl in the refrigerator and chill for 30 minutes to allow the mixture to firm up for easier handling.
  4. Portion the chilled mixture and roll it between your palms to form balls about one inch in size.
  5. Roll each formed ball in the extra graham cracker crumbs until fully coated on all sides.
  6. Transfer the coated bites to a tray or container and refrigerate for another 30 minutes so they fully set.
