Method
 

  1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. Create a well in the center of the dry ingredients and pour in the milk, melted butter, vanilla, and egg.
  3. until smooth, leaving a few lumps if necessary.
  4. If the batter is too thick, slowly fold in additional milk, one tablespoon at a time, until desired consistency is achieved.
  5. Set the batter aside and preheat your non-stick pan or griddle over low-medium heat.
  6. Lightly grease the pan with butter, wiping away excess with a paper towel.
  7. Pour ¼ cup of batter into the pan, spreading it into a round shape using the back of a spoon.
  8. until bubbles form on the surface and the underside is golden.
  9. Flip pancakes gently using a spatula and cook until golden on both sides. Repeat with the remaining batter.
  10. Serve with maple syrup, fruit, or your favorite toppings.
