Method
 

  1. Combine the water, butter, salt, and sugar in a saucepan and bring to a rolling boil over high heat.
  2. Lower the heat and slowly stir in the flour until a smooth dough forms and pulls away from the pan.
  3. Transfer the dough to a mixing bowl and let it rest for several minutes until slightly cooled.
  4. Add the egg and vanilla, then beat until the mixture becomes glossy and fully blended.
  5. Move the dough into a piping bag, preheat the air fryer to 375°F, and lightly grease the basket.
  6. Pipe or spoon small dough portions into the basket, spacing them apart, then brush lightly with butter.
  7. Air fry in batches until puffed and golden, adjusting time as needed for your appliance.
  8. Stir together the sugar and cinnamon in a shallow bowl while the bites finish cooking.
  9. Roll the warm bites in the cinnamon sugar until fully coated, brushing lightly with butter if needed.
  10. Serve immediately with your favorite dipping sauces.
